The difference between my bait and anyone else's frozen skipjack is the most important factor of them all... TIME! From the time that the fish is landed by rod and reel, the clock starts ticking. Every tick of the clock degrades the bait until it is FROZEN SOLID COMPLETELY THROUGH. Not stiff in the ice or ice/salt mix, but actually FROZEN. The advantage I have is that I live very close to the places where I catch the bait. This allows me to catch, pack in ice, bring to the processing location, chamber vacuum seal, and place each skipjack on wire shelves in a deep freezer that maintains an average temperature below -15 degrees Fahrenheit. The entire journey from water to being frozen stiff takes 1 to 4 hours at most due to proximity to the water and catching the fish in small batches.
